Polka-Dot Layer Cake



The barang-barang needed.

A - beat together at high speed for 5 - 7 mins.
9 egg yolks, 3 egg whites, 95g super fine flour, 25g sago flour, 105g castor sugar & 3/4 tbsp ovalette
B - beat together at high speed till light and fluffy
250g butter, 2 1/2 tbsp condensed milk & 1 small tin kaya (170g)

Mix A & B together and beat for another min or two till well combined.


The combined mixture.

Divide into 2 equal portions. Add 1 tsp pandan paste to 1 and 2 tsp chocolate emulco & 2 tsp cocoa to the other.

Grease a 7" square cake tin and line the bottom with baking parchment.
Level 3 tbsp of pandan mixture unto cake tin and grill at 200°C till golden (abt 5-7 mins). Do the same for the chocolate layer.



For the 3rd layer (pandan)carefully line the round (baby) cookies as shown.
Repeat till mixture is used up.
For the last layer use the top & bottom flame and bake at 180°C for about 5-10 mins.


Note : For the 10-layers, I only line 3 layers with cookies (abt 150g). For more visible polka-dots, line the cookies close together.



The cake all ready to be served.

Cranberry Layer Cake


Used tinned cranberry sauce (yes for turkey!). 1st impression it tasted more like blueberry pancake. Improves with refrigeration.

This is a peach of a cake. Really yum yum. Canned peaches used. Refrigerates and freezes well.

Prunes Layer Cake





This is a hot favourite among my Kuching relatives. Need I say more?

Chocolate Cheese Layer Cake



A bit drier than my usual layer cakes. Ran out of cocoa and had to top up with Milo. The saltish taste of the cheese is quite unusual but 2 nieces and a nephew love it.

Pandan Coconut Layer Cake



This one is also a bit dry probably due to the dessicated coconut flakes added. Must remember to add more santan/butter/cream the next time. The fragrance from the pandan paste is quite delightful though.

Spiced Layer Cake



Baked this several times. Had always turned out well using ovalette. My deterrent in baking it too often is the 25 egg yolks & 400g+ of Golden Churn tinned butter. Don't want to get sued for someone's sky-rocketting cholesterol!

Blueberry Cheese Layer Cake (Steamed)



This one is steamed and not baked. Has a texture more like 'kau teng kueh' (Chinese steamed 9-layer cake). It improved after refrigeration. Not likely to be making this one again as the taste is not in tandem with its costs (RM40+).

Orange Chocolate Layer Cake



The tang of the fresh orange juice and zest marries well with the cooking chocolate. Need to use less sugar if the orange is really sweet. A nice refreshing change from the usual.

Durian Layer Cake









This is by far the yummiest I have ever baked! Moist, rich & creamy and so fragrant that the Tupperware used to store it still smelt of durian after washing.
Tasted just as good after 2 weeks in the freezer that my friend 6 yr old son, a very picky eater polished off 5 pieces. I could have wolfed down the entire cake myself if not for the calories!
